Domaine de Fondrèche is widely recognised as one of the very best producers in the Ventoux appellation. What is more, their fine red and white wines remain exceptional value, despite the ever increasing fame and demand. Winemaker Sebastien Vincenti loves his terroir and believes that his vines are stronger when treated naturally, including 100% organic manure and no chemical herbicides.
Persia is made using some of the estates oldest vines which gives the wine it’s great concentration. The red is 90% Syrah with a dash of Mourvedre. The wine then spends a year in barrels before bottling. Packed with bluberry and blackberry, a herbal note lifts the palate. The palate is smooth and rich but remains refreshing. This is a perfect match for rare beef.
