    Trinity Hill is an iconic New Zealand winery, celebrating over 25 years of world-class winemaking in the famed Gimblett Gravels District of Hawke’s Bay. Founded in 1993, by winemaker John Hancock together with Robert and Robyn Wilson, owners of The Bleeding Heart and The Don in London, Trinity Hill has become a byword for quality and consistency.

    The 2019 The Gimblett is a Cabernet-led blend that bursts with fresh black currant and violet aromas, speaking of the two major varieties in play: Cabernet Sauvignon and Cabernet Franc, respectively. This young mid-weight red isn't just fruit; it has savory and violet characters, and 20 months maturing in French oak (53% new) contributed vanilla and cedar notes that play a supporting role to the ripe fruit flavors. The conclusion is dry and savory, with young, grippy tannins and gently refreshing acidity providing a lightly chewy finish that needs time to mellow.
